Homemade Breakfast: Desi Scrambled Eggs with Leftovers

Had a couple of leftover Appams and Stews (plain and one with egg masala)… So, made some scrambled eggs indian style 🙂

Just in case anyone is wondering, my desi scrambled egg recipe is as follows:
You need:

  1. 2 eggs
  2. 1 tsp of butter
  3. 1 small or half of a medium or quarter of a larger onion chopped
  4. Half a tsp of Chicken masala powder
  5. Salt and Crushed pepper to taste

Method:

  1. Melt the butter in a pan (preferrably non-stick, else you’ll need more butter) and put in the chopped onions… Allow it to sweat and start changing color (not a good idea to let it go completely brown)…
  2. Add salt, the chicken masala powder and crushed pepper and mix well…
  3. Once the masala gets cooked, reduce the heat…
  4. Beat the eggs a bit and add to the pan containing the onion masala
  5. Keep the heat low and keep mixing till eggs gets cooked to the consistency you like and serve…
